REMEMBER WHY YOU STARTED

Have you ever walked into a party looked at the huge array of free sweets and food, shrugged your shoulders, and sadly walked away because you couldn't eat any of it? If you haven't, count yourself as lucky. Vegan, gluten-free, dairy-free, nut-free now a days, whether if it's too earn cool points with the earth or to stay alive for a little longer, people have some major dietary restrictions. But it shouldn't keep you from cake.

I was thirteen the first time I attempted a gluten-free dessert, it was embarrassing, slumpy and unattractive. But, it was so appreciated. He was a nine year old little boy who was so used to never being able to indulge because he had a severe gluten allergy. When I presented him with this homely dessert he was stoked. And that made it worth it. And ever since then, I've been perfecting my attempts and giving everyone the opportunity to eat cake.

My first memory with baking is making brownies for my 5th grade class with my uncle Jamie. I remember asking with my face pressed against the oven door, "Are you sure there's enough batter in there? It looks a little low." And he patiently, with a smirk on his face, responded, "It'll rise."

That's where it all began. It snowballed from there, turning into salty chocolate chip cookies, cupcakes with the buttercream sliding off, celebrating after selling a single muffin at my small town farmers market, bake sales to raise money for missions trips. I started this hobby and never thought that my countless hours in front of baking how-to Youtube videos would lead me here. Transforming my hobby into my job. I'm still constantly learning, exploring new ideas, and making many more failed attempts.
